Using Junk
Junk has no effect of its own. It can still count toward another Trinket's collection bonus, such as Fancy Sword.
When it fits
Compare it with every other offered reward. A collection bonus can give Junk some value, but another reward may add the same count and a useful ability.
How to use it
With Fancy Sword, calculate the extra 3% Damage from one more counted Trinket. Then compare that gain with the other choices.
Example
If Fancy Sword counts ten Trinkets before the reward and eleven afterward, its Damage bonus rises from 30% to 33%. Fancy Sword supplies those extra three percentage points.
What you give up
Junk offers no direct improvement. A reward with a helpful effect can often contribute to the collection count as well.
